Maple Cinnamon Doughnuts [By Erin]

My husband loves doughnuts. (Honestly, they are his favorite food.) We have been experimenting with our new doughnut pan and a few recipes. These doughnuts are my favorite so far.

Please note that they barely made it to the plate before they were devoured, so I don’t have many pictures! I’ll try and take more the next time I make these.

Combine dry ingredients in a large bowl.
1 cup all purpose four
3/4 teaspoon baking powder
3/4 teaspoon baking soda
Pinching of salt

In a small bowl combine wet ingredients
1/3 cup buttermilk (if you don’t have buttermilk use regular and add a teaspoon of vinegar)
1 egg lightly beaten
1 tablespoon canola oil
2 teaspoons lemons juice
2 1/2 tablespoons maple syrup

Make a well in the center of the dry ingredients and add the wet. Gently fold until the mixture is just combined.

Fill doughnut pan until each well is 3/4 full. I used a ziplock bag and cut the corner and piped the mixture. You can also just spoon it in. Bake at 400F for 10 minutes or until the doughnuts spring back when you touch them.

To top them: Combine 1/2 cup of sugar with 2 tablespoons of cinnamon. Brush each doughnut with melted butter and dip in the cinnamon sugar mixture.

Since the only sugar in the batter is the maple syrup don’t be afraid of putting too much topping on!

Then enjoy! (If you had not eaten them as soon as they made it out of the oven that is!)
