Before I get into the recipe, I want to thank you for reading all of our Cookie Week entries. Victoria and I have had so much fun with this. We love to bake and enjoy every minute of sharing that with all of you.
I love simple recipes at the holidays. Sometimes, you just don’t want to stress over anything. Now, combine simple with delicious and festive and you have yourselves a winning combination.
Take 1 package brownie mix, add 1/4 cup of oil, 2 eggs, 2 teaspoons of peppermint extract, 1 tablespoon of water and combine until mixed. Add 1 cup of chopped peppermint bark. Stir until just combined. Drop by 1 in cookie scoop.
*NOTE: These cookies will spread! Leave extra room.
After placing on the cookie sheet top with a few more pieces of peppermint bark and bake at 325F for 12-14 minutes. You have about 2 dozen cookies when your done.
