Ranger Cookies [By Erin]

Nothing says Christmas cookies to me like Ranger cookies. The recipe is from my grandmother and they are consistently a favorite. If you haven’t heard of these before you are in for a treat.


Cream together shortening and sugars. Add eggs and vanilla. Mix those until smooth. (If using a stand mixer, at this point you will want to turn the setting to the lowest possible). Adding one at a time: flour, baking soda, baking powder, salt, oatmeal, rice crispies, coconut, and walnuts (optional). Drop by a 1 inch size ice cream scoop (or rounded teaspoons) onto a sheet lined with parchment. Bake at 350F for 10 minutes.

Please note: This batter is VERY dry. To help with forming the cookies I take a small glass of water and dip the ice cream scoop in it before getting the batter. This tiny amount of water makes all the difference! (If you are using rounded teaspoons, dip your hands in water when forming. )



1 cup butter flavor shortening

1 cup granulated sugar

1 cup brown sugar

2 eggs

1 teaspoon vanilla

2 cups flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

2 cups quick oatmeal

2 cups rice crispies

1 cup coconut

3/4 cup chopped walnuts (optional)
