Welcome to cookie week! I thought I would start out with doing a cookie with chocolate. They may not look like Christmas cookies, but boy are they delicious. If you would like to give them a more seasonal taste, you can use mint extract instead of vanilla. This recipe is so easy you can do it with your kids if you choose!
You will need:
1 cup all purpose flour
1/4 cup plus 2 tablespoons cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/4 sticks softened butter
1 cup sugar
1 teaspoon vanilla extract
1. Whisk together flour, cocoa, salt and baking soda in a bowl. Set aside.
2. In a separate bowl, beat butter, sugar, and vanilla until light and fluffy, 2-3 minutes. Add egg. On low speed, add in cocoa and flour mixture. Mix until combined.
3. Cover bowl and place in the refrigerator until the dough is firm, 1-2 hours.
4. Line cookie sheets with parchment paper. Preheat oven to 350°. Roll the dough into balls, then roll in sugar. Bake for about 10 minutes. Transfer cookie sheets to wire cooling racks.
And that is all there is to it! You should wind up with about two dozen, as long as you don’t snack on too much cookie dough, which I will say is delicious. 🙂
